What Is a Bún Bowl?
Bún refers to thin white rice vermicelli noodles, and Bún bowls are a family of Vietnamese dishes where these noodles serve as a cool, light base. Unlike hot noodle soups, Bún bowls are served at room temperature or slightly chilled — they’re assembled rather than cooked to order in a pot.
The standard Bún bowl architecture:
- Base layer: A generous heap of thin rice vermicelli noodles
- Vegetable layer: Shredded lettuce, bean sprouts, cucumber, fresh mint, and cilantro
- Protein: Grilled meats, spring rolls, or a combination
- Garnish: Crushed roasted peanuts and crispy fried shallots
- Dressing: Nước chấm poured over everything — a sweet, sour, savoury, slightly spicy fish sauce vinaigrette

The most beloved Bún dish is Bún Thịt Nướng — grilled pork vermicelli bowl. The pork is marinated in lemongrass, garlic, fish sauce, and sugar, then grilled until caramelized and slightly charred. The smoky sweetness of the pork against the cool noodles and fresh herbs is a combination that’s hard to improve on.
Variations include Bún Thịt Nướng Chả Giò — the same dish topped with crispy fried spring rolls for added crunch and richness. This is our most popular Bún combination, and for good reason.
