Bún Bò Huế (pronounced “boon baw hway”) translates roughly to “beef noodle soup from Huế.” Unlike the clear, delicate broth of phở, Bún Bò Huế is rich, spicy, and deeply aromatic. The broth is built on a base of pork and beef bones simmered for hours, then layered with lemongrass, shrimp paste (mắm ruốc), and chili oil for a flavour profile that’s simultaneously earthy, tangy, and fiery.
The noodles are thick, round rice noodles — chewier and more substantial than the flat strands in phở. The toppings typically include tender sliced beef shank, pork hock, and Vietnamese-style pork sausage (chả lụa or bò viên). It’s served with a plate of fresh herbs, bean sprouts, banana blossom, and lime — ingredients you fold into the bowl to cool and contrast the heat.
